PARSLEY

Parsley (Petroselinum crispum) is an aromatic flowering herb native to the central Mediterranean region, and now widely cultivated in temperate climates and commonly used as an herb, a spice and a vegetable. Bright to dark green in color, parsley is an erect, branched plant that has 4-10 inch-long hollow stems, with small flat or curled leaves alternately arranged at the top of the stems.

A rich source of many bioactive compounds, parsley contains phenolic compounds, flavonoids like luteolin and apigenin, carotenoids like lycopene, beta-carotene and alpha-carotene, and volatile oils like myristicin, apiol, limonene, eugenol and alpha-thujene. It is rich in iron, potassium, calcium, phosphorus, magnesium, folic acid, vitamins K and C, and a good source of dietary fiber and amino acids.*
