Chia

General Information

Chia is native to Mexico where its seeds were greatly valued for their nutritional and medicinal properties. These tiny seeds were even used as currency by ancient cultures.

Chia seeds are oval in shape and mottle-colored with brown, gray, black and white. Measuring approximately 1 mm in diameter, they have a mild, nutty taste and crunchy texture.

Chia seeds are hydrophilic, meaning that when soaked they absorb up to 12 times their weight in liquid and develop a mucilaginous coating in the process. This coating helps maintain satiety and gives beverages with soaked Chia a gelatinous texture.
