Beet (Beta vulgaris), also known as beetroot, table beet, garden beet, sugar beet and golden beet, is the taproot of a beet plant. The most common beet has a colorful root that adds a rich red to purple hue and a sweet, earthy flavor to food and drinks. Beet root's nutritional profile is equally rich. It is an excellent source of betalains, especially betacyanins, which are responsible for the color of red beets. General Information

Beets belong to the same botanical family as spinach and chard. There are different beet varieties, each with their own distinct flavor, color and nutritional profile. There are white, golden yellow, red and white striped variants, and the most common deep reddish purple variety. Beets have a sweet, earthy flavor and can be eaten fresh, boiled, steamed, roasted, pickled or juiced.

This highly nutritious vegetable is native to the Mediterranean region where it was consumed more for its bitter-tasting leaves than its roots during ancient times. At that time, the root was mainly used for dyes and by physicians and naturalists for their health benefits.
