Beets belong to the same botanical family as spinach and chard. There are different beet varieties, each with their own distinct flavor, color and nutritional profile. There are white, golden yellow, red and white striped variants, and the most common deep reddish purple variety. Beets have a sweet, earthy flavor and can be eaten fresh, boiled, steamed, roasted, pickled or juiced.
