Oat grass (Avena sativa L), a cereal grass from the same family as barley grass and wheatgrass, is harvested early, at the point when it has reached its nutritional peak. Native to temperate Europe and Asia, it is often grown as a pasture grass and is found growing wild.
Oat Grass is rich in chlorophyll, the pigment that converts sunlight to energy in plants, which is similar in structure to the heme in hemoglobin. High in dietary fiber and protein, it is an excellent source of beta carotene, calcium, iron, zinc, manganese, vitamins K and C, and B-complex vitamins.
