Maitake mushroom, a popular culinary mushroom known for its pleasant flavor and many health benefits, is one of the most widely cultivated mushrooms in the world. Also known as hen-of-the-woods, dancing mushroom, ram’s head, sheep’s head and ‘king of the mushrooms’, it has been used in Japan and China for thousands of years and is now grown mostly in China, Japan, Europe and North America. Maitake mushrooms can weigh over 100 pounds and grow on the forest floor at the base of trees, particularly oaks, elms and maples.
Rich in antioxidant polysaccharides like beta-glucans (soluble dietary fibers), maitake mushrooms contain D-fraction, MD-fraction and SX-fraction beta-glucans, which are unique compared to other mushroom-derived beta-glucans. They also contain ergosterol (provitamin D2) and are a good source of fiber, amino acids, vitamins and minerals,especially niacin (vitamin B3), riboflavin (vitamin B2), potassium and phosphorus.
